About the Journal

Food Innovation, Function and Sustainability (FIFS) is an international, peer-reviewed, open-access journal dedicated to advancing scientific knowledge at the interface of food innovation, functionality and sustainability. The journal provides a multidisciplinary platform for high-quality original research, reviews and other scholarly contributions addressing innovative approaches to the development, processing, characterisation and evaluation of foods, ingredients and food-related systems.

FIFS particularly welcomes research that connects fundamental food science with emerging technologies and sustainable solutions. Areas of interest include innovative food processing and preservation; food chemistry and structure–function relationships; functional foods, bioactive compounds and health-related functionality; sustainable ingredients and alternative food resources; valorisation of food and agricultural by-products; circular food systems; green and resource-efficient processing; food biotechnology and fermentation; advanced food materials and packaging; foodomics and analytical innovation; and digital and data-driven approaches relevant to food innovation.

The journal aims to support scientifically rigorous, reproducible and internationally relevant research that contributes to the development of safe, functional, innovative and environmentally responsible food systems.
