Food Innovation, Function and Sustainability is an international, peer-reviewed, open-access journal dedicated to advancing high-quality research at the intersection of food innovation, functionality and sustainability. The journal publishes fundamental and applied research that contributes new scientific knowledge, technologies, ingredients, materials and processes for the development of safe, functional, high-quality and sustainable foods.

The journal particularly welcomes research connecting two or more of its three core pillars Innovation, Function and Sustainability including innovative food processing and preservation, food chemistry and structure–function relationships, functional ingredients and bioactives, sustainable and next-generation food ingredients, food by-product valorisation and circular processing, green technologies, food biotechnology, advanced food materials and packaging, foodomics, and digital and data-driven food innovation.
